Today we would like to present you this amazingly yummy Thanksgiving Recipe: Cranberry, Sausage and Apple Stuffing. This mellow stuffing matches perfectly this maple roast turkey. Cranberries, sausage, and apples, what an unusual and yet too delicious combo! You will need around an hour and a half to prepare this dish.

Ingredients

  • 1 pound sweet Italian sausage, casings
  • 1/4 cup
  • 6 cups coarsely chopped
  • 3 tart apples – peeled, cored and
  • 2 cups chopped
  • 4 teaspoons poultry
  • 2 teaspoons dried rosemary,
  • 1 cup dried
  • 12 cups white bread cubes, baked until slightly dry
  • 1 1/3 cups chicken stock
  • salt and black pepper to taste

Instructions

  1. Cook and stir sausage in a large skillet over medium heat, crumbling coarsely, for about 10 minutes. Remove sausage to a large bowl with a slotted spoon. Empty pan of grease.
  2. Into the same pan melt the butter. Add the leeks or onions, apples, celery and poultry seasoning; cook until softened, about 10 minutes. Add the rosemary, dried cranberries, and cooked sausage. Mix all with the dried bread cubes. Season to taste with salt and pepper. Moisten with the chicken stock.
  3. Stuff turkey with about 5 cups for a 14-pound turkey. Add additional chicken stock to moisten stuffing if needed. Remaining stuffing can be baked in a covered buttered casserole at 350 degrees F (175 degrees C) for about 45 minutes. Uncover and bake for another 15 minutes to brown top.

In the spirit of Thanksgiving, today we are sharing our Thanksgiving Side Dish Recipe: French Onion Green Bean Casserole. Who doesn’t love casserole, right? You can serve them ad one of the main dishes if you prefer non-traditional Thanksgiving dinners, but be sure to adjust the portions! You will need around an hour and a half to make this fantastic casserole.

Ingredients

For the onions:

  • 2 tablespoons butter
  • two large yellow onions thinly sliced lengthwise
  • salt and ground black pepper to taste
  • 1 tablespoon sherry vinegar

For the white sauce:

  • 2 tablespoons butter
  • two and a half tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 1 pinch ground nutmeg
  • cayenne pepper to taste (optional)
  • 1/4 teaspoon ground thyme

For the topping:

  • 2 tablespoons melted butter
  • two-thirds cup panko bread crumbs
  • 2 pounds fresh green beans, trimmed
  • 4 ounces shredded Gruyere cheese, divided
  • 1/3 cup grated Parmesan cheese

Instructions

 

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9×13 inch casserole dish.
  2. Heat 2 tablespoons of butter in a large skillet over medium heat. Stir the onions into the pan; cook and stir until very soft and golden brown, about 15 minutes. Stir in sherry vinegar. Transfer to a small bowl, and reserve.
  3. In the same skillet, melt 2 more tablespoons butter. Whisk in 2 tablespoons flour. Stirring constantly, cook over medium heat until the flour smells like baked pie crust, about 3 minutes. Slowly whisk in milk, about 1/2 cup at a time, then whisk in nutmeg, cayenne pepper, and thyme. Bring to simmer, and cook until thickened, whisking constantly, 3 more minutes. Transfer to a bowl and reserve.
  4. Melt remaining 2 tablespoons butter in clean skillet; stir in panko until all crumbs are coated; reserve.
  5. Bring a large saucepan of salted water to a boil over medium heat, and boil beans until bright green and crisp but not raw tasting, 3 to 4 minutes. Drain very well.
  6. Spoon half of the caramelized onions into the prepared casserole dish; top with green beans. Season with salt and black pepper. Spread reserved white sauce over the green beans; sprinkle with half of the Gruyere cheese. Top with the rest of the onions, and use the back of a spoon to push onions down into sauce and cheese. Top with the buttered panko crumbs, the remaining Gruyere, and Parmesan cheese.
  7. Bake in the preheated oven until hot throughout and lightly browned, about 30 minutes. Let sit 10 minutes before serving.

Thanksgiving Pasta: Home-Style Macaroni and Cheese – yes, you can serve pasta for your Thanksgiving dinner, why not. Cheddar and cream cheese sauce and Dijon topped with bread crumbs and then baked. So yummy!

Ingredients

  • ounces elbow macaroni
  • 1/4 cup butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 (8 ounce) package cream cheese
  • 4 slices canned jalapeno peppers, chopped
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon ground black pepper
  • salt to taste
  • 3 dashes hot sauce, or to taste
  • 2 cups shredded Cheddar cheese
  • 1 cup dry bread crumbs
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.
  3. Melt 1/4 cup butter in a 3-quart saucepan over medium heat. Stir flour into melted butter and cook until smooth and bubbling, about 1 minute. Mix milk, cream cheese, jalapeno peppers, Dijon mustard, black pepper, and salt into flour-butter mixture; cook, stirring occasionally, until sauce is thickened, about 5 minutes. Mix macaroni and Cheddar cheese into sauce; pour into a 2-quart casserole dish.
  4. Mix bread crumbs, 2 tablespoons butter, and parsley together in a bowl; spread over macaroni and cheese.
  5. Bake in the preheated oven until golden brown, 15 to 20 minutes.

The best way to start those busy mornings is by making croissant sandwiches filled, delicious and microwaved!

You can make them in under 30 minutes and leave them in the freezer for a fast getaway the following morning.

Ingredients:

  • 1 tablespoon olive oil
  • 4 large eggs, lightly beaten
  • 1/4 cup half and half
  • Kosher salt and freshly ground black pepper, to taste
  • 8 mini croissants, halved horizontally
  • 4 ounces thinly sliced ham
  • 4 slices cheddar cheese, halved

Instructions:

  1. Heat olive oil in large skillet over medium high heat. Add eggs to the skillet and cook, whisking, until they just begin to set. Gently whisk in half and half; season with salt and pepper, to taste.
  2. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; set aside.
  3. Fill croissants with eggs, ham and cheese to make 8 sandwiches. Wrap tightly in plastic wrap and place in the freezer.
  4. To reheat, remove plastic wrap from the frozen sandwich and wrap in a paper towel. Place into microwave for 1-2 minutes, or until heated through completely.
  5. Serve immediately.

Christmas Breakfast Recipe – Eggs Benedict Casserole

This is the perfect holiday meal! Serve your loved ones a mouth-watering breakfast, filled with rich eggs, Canadian bacon and flavorful sauce.

You can even prepare it the night before and just bake it in the morning. It takes 20 minutes of prep time and 45 minutes of cooking time.

Ingredients:

  • 2 (6 oz) pkgs. Canadian bacon, chopped
  • 1 (13 oz) pkg English muffins (6 total), each split and cut into 1-inch cubes
  • 8 large eggs
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • Salt and freshly ground black pepper
  • 2 cups milk (anything but skim)
  • Minced fresh chives or parsley

Hollandaise sauce:

  • 4 large egg yolks
  • 1/2 cup heavy cream
  • 2 Tbsp fresh lemon juice
  • 1 tsp dijon mustard
  • 1/2 cup unsalted butter, melted
  • 1/4 tsp salt
  • 1/8 tsp sugar
  • 1/8 tsp cayenne pepper (optional)

Instructions:

  1. For the casserole: Spray a 13 by 9-inch baking dish with non-stick cooking spray. Sprinkle half of the Canadian bacon into an even layer in baking dish, top with English muffins, then sprinkle top evenly with remaining half of Canadian bacon.
  2. In a large mixing bowl (preferably one with a pouring spout) whisk together eggs, onion powder garlic powder and paprika vigorously until blended. Mix in a few pinches of salt and pepper and the milk until well blended.
  3. Slowly and evenly pour egg mixture over casserole working to coat English muffins evenly. Cover with plastic wrap and chill in refrigerator overnight.
  4. The following morning preheat oven to 375 and remove casserole from refrigerator and let rest while oven is preheating, or for at least 15 minutes.
  5. Remove plastic wrap then cover casserole dish with foil and bake 30 minutes then uncover and continue to bake until a knife inserted into center of casserole comes out clean, about 15 – 20 minutes longer.
  6. For the hollandaise sauce: Bring a few inches of water to a light boil in a medium saucepan, reduce to low heat, or a light simmer.
  7. In glass bowl that’s large enough to fit over that same medium saucepan (or double boiler) whisk together egg yolks, cream, lemon juice and mustard.
  8. Set bowl over simmering water in saucepan (bowl shouldn’t touch water) and whisk mixture constantly until it reaches 160 degrees, or coats the back of a spoon.
  9. Reduce to very low heat and while whisking very slowly pour in melted butter.
  10. Remove from bowl from saucepan. Add in salt, sugar and cayenne pepper and mix well. Serve casserole warm topped with warm hollandaise sauce and minced herbs.

Ingredients

    • 4 eggs
    • 1/2 cup white sugar
    • 2 teaspoons vanilla extract
    • 1/8 teaspoon salt
    • 1 cup whipping cream
    • 1/2 cup flour
    • 2 pears – peeled, cored, and chopped
    • 2 tablespoons coarse sugar, such as turbinado

Instructions

  1. Preheat oven to 325 degrees F. Generously grease six 3/4-cup souffle dishes or six 6-ounce custard cups.
  2. Beat together eggs, white sugar, vanilla, and salt in a large bowl with an electric mixer on medium speed until light and frothy, about 5 minutes. Add whipping cream, then flour; beat until mixture is smooth.
  3. Divide half of batter among prepared dishes, then spread two-thirds of pears over batter. Pour in remaining batter and top with remaining pears.
  4. Bake 30 minutes, then rotate pan and sprinkle each clafouti with 1 teaspoon coarse sugar. Continue baking until puffy and lightly browned and a knife inserted off-center comes out clean, about 10 minutes more. Cool on a wire rack 10 minutes. (Clafoutis will fall as they cool.)
