Ingredients For Cookie Dough:
  • 1 1/2 tbsp Almond Flour
  • 2 tbsp Grassfed Ghee
  • 1 tsp Vanilla Extract
  • 1 tbsp Lakanto Classic Monkfruit Sweetener
  • 1/4 tsp Sea Salt
  • 1 tsp MCT Oil
  • Handful sugar-free chocolate chips (or Lakanto Chocolate Bar, chopped)
  • 1 heaping tbsp Almond Butter

Directions:

1. In a high-speed blender, blend all ice cream ingredients together. Then place in your ice cream maker. (Note- if you do not have an ice cream maker, you pour the blended ingredients into a bowl, freeze, and then re-blend once frozen).
2. Next, in a separate bowl mix cookie dough ingredients. Form into small balls of your own desired size.
3. Finally, top ice cream with cookie dough balls and enjoy.

Ingredients:

  • 2 Ripe Avocados
  • 3 Organic Pasture Raised Eggs
  • 1 c Almond Flour
  • 1/2 c Coconut Flour
  • 1/4 c Lakanto Classic Monkfruit Sweetener
  • 3 heaping tbsp Almond Butter
  • 2 tbsp Raw Cacao Powder
  • 1/2 tsp Himalayan Sea Salt
  • 1/2 tsp Baking Soda
  • 1/2 tsp Vanilla Extract
  • 1/2 c Sugar-Free Chocolate Chips (or 1/2 bar Lakanto Chocolate, chopped)

Directions: 

1. First, preheat oven to 350 degrees.
2. Next, in a blender or food processor, combine avocados, eggs, almond butter, and vanilla extract until smooth.
3. And then pour into a mixing bowl and add in almond flour, coconut flour, Lakanto Classic Monkfruit Sweetener, cacao, sea salt, and baking soda. Then mix in half of the chocolate chips/chunks.
4. Line an 8 1/2 x 4 1/2 inches loaf pan with parchment paper (if using a smaller, deeper pan, you may have to cook longer).
5. Pour in batter, and then top with the rest of the chocolate chips/chunks.
6. And finally, bake at 350 degrees for 35-40 minutes or until you can pull a fork out clean.
