Roasted Carrot Soup is a soup made with carrot, garlic, cumin and Greek yogurt (which adds on its creaminess!). It can be kept in the fridge for 5 days. You will need around 80 minutes to prepare it.


  •  1 1/2 pounds carrots — peeled, cut into 1/2-inch slices (about 6 large carrots)
  •  1 large yellow onion — thinly sliced
  •  4 cloves garlic — peeled and left whole
  •  2 tablespoons extra-virgin olive oil
  •  1 1/2 teaspoons kosher salt — divided, plus additional to taste
  •  1 teaspoon ground cumin
  •  1/4 teaspoon black pepper — plus additional to taste
  •  2 cans whole peeled tomatoes — (28 ounce cans)
  •  1 teaspoon dried basil
  •  1/2 cup plain Greek yogurt — plus additional for serving
  •  Fresh basil — optional, for serving

Roasted carrot soup


  1. Place racks in the upper and lower thirds of the oven and preheat the oven to 400 degrees F. Generously coat two baking sheets with cooking spray. Set aside.
  2. Place the carrots, onions, and garlic in a large bowl. Drizzle with the olive oil, then sprinkle with 1 teaspoon salt, cumin, and pepper. Toss to evenly coat, then spread in a single layer on the prepared baking sheets, ensuring that the vegetables do not crowd one another. Roast for 25 to 30 minutes, turning twice throughout, until the vegetables are tender and browned. Let cool on the pans for 10 minutes.
  3. While the vegetables cool, drain the juice from the tomato cans into a small bowl or measuring cup. Set aside.
  4. Working in two batches, add half of the roasted vegetables to a food processor fitted with a steel blade or to a blender. Add 1 can of the drained tomatoes. Purée until smooth, then pour the purée into a 4-quart or larger heavy-bottomed pot, such as a Dutch oven. Repeat with the remaining vegetables and tomatoes, then add to the pot.
  5. Stir in the reserved tomato juices, basil, yogurt, and remaining 1/2 teaspoon salt. Bring to a gentle simmer and let cook for about 10 minutes, until fully heated through. Taste and add additional salt and/or pepper as desired. Serve warm, topped with fresh basil and/or additional Greek yogurt.

My kids and husband love this Crockpot Potato Soup. You can garnish it with bacon, some heavy cream and cheddar (to add some color to otherwise pretty pale looking potato soup). I like serving it with lamb or beef, it is such a yummy combo!


  •  2 tablespoons unsalted butter*
  •  1 small yellow onion — diced
  •  3 large carrots — scrubbed and diced
  •  2 pounds Yukon gold potatoes — peeled and cut into 1/2-inch chunks
  •  1 teaspoon Italian seasoning
  •  1 teaspoon kosher salt — plus additional to taste
  •  1/4 teaspoon cayenne pepper
  •  3–4 cups reduced-sodium chicken broth
  •  1 (12-ounce) can 2% evaporated milk
  •  3 tablespoons cornstarch
  •  1 cup shredded sharp cheddar cheese — plus additional for serving
  •  1 cup nonfat plain Greek yogurt — plus additional for serving


  •  Cooked crumbled bacon
  •  Chopped fresh chives

  1. Lightly coat a 6-quart or larger slow cooker with nonstick spray. In a large skillet, melt the butter over medium heat. Add the onion and sauté until softened, about 6 to 8 minutes, stirring frequently and adjusting the heat so that the onion does not crisp or turn dark brown. Add to the slow cooker.
  2. To the slow cooker, add the carrots, potatoes, Italian seasoning, salt, cayenne, and 3 cups chicken broth. Stir to combine. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the potatoes and carrots are completely tender.
  3. While the vegetables cook, in a medium bowl, whisk together the evaporated milk and cornstarch until no lumps remain. During the last 30 minutes of cooking, add the cornstarch/milk mixture. Continue cooking for 30 additional minutes.

  4. Just before serving, stir in the shredded cheddar and Greek yogurt. With a potato masher or large spoon, mash half of the potatoes directly in the slow cooker. The soup will continue to thicken as it cools. If you would like the soup to be thinner, add the remaining 1 cup chicken broth until you reach your desired consistency (warm up the broth first). Stir to combine, then season with salt and pepper to taste. Serve hot, topped with bacon, chives, and additional cheese/Greek yogurt as desired.

Crockpot Butternut Squash Soup


Crockpot butternut squash soup recipe

Butternut squash soup – so perfect for those lazy autumn nights. Its creaminess and warmth will help keep you warm and cozy. It is thick and delicious and healthy (if you don’t load it with a gallon of heavy cream!)



  •  1 tablespoon extra-virgin olive oil
  •  one medium yellow onion — chopped into 1/4- to 1/2-inch dice (about 1 1/2 cups total)
  •  2 medium butternut squash — about 6 pounds total
  •  two medium apples — cored and roughly diced, no need to peel (I like using a mix of sweet apples, such as McIntosh or Golden Delicious, and tart, such as Granny Smith or Cortland)
  •  2 cups low-sodium vegetable broth or low-sodium chicken broth
  •  1 teaspoon kosher salt
  •  1/2 teaspoon ground nutmeg
  •  1/4 teaspoon black pepper — use white for a slightly milder taste and if, for presentation purposes, you don’t want the black specks in the soup)
  •  fourth teaspoon cayenne pepper
  •  3/4 cup light coconut milk — (may use up to 1 1/2 cups from one 14-ounce can)


  •  Toasted pumpkin seeds
  •  Chopped fresh sage
  •  Coconut cream, coconut yogurt (for dairy free), or regular nonfat Greek yogurt (if dairy free isn’t a priority)

Lightly coat a 4-quart or larger slow cooker with nonstick spray. In a medium saucepan, heat the olive oil over medium heat. Add the onion and cook until softened and fragrant, about 8 to 10 minutes, stirring occasionally. Transfer to the slow cooker.

While the onion cooks, trim the top and bottom ends off of the butternut squash. With a vegetable peeler, peel the squash. Cut it in half lengthwise and scoop out the center seeds. Cut into 3/4-inch cubes. Transfer the cubes to the slow cooker.

To the slow cooker, add the apples, broth, salt, pepper, nutmeg, black pepper, and cayenne pepper. Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours, until the squash and apples are tender.

Add 3/4 cup coconut milk. Puree the soup with an immersion blender or carefully transfer it to a food processor fitted with a steel blade or a blender and puree it in batches. If using a blender or food processor, be extremely careful not to fill it too much, as hot soup likes to splatter. Return the soup to the slow cooker once complete. If you’d like the soup thinner, add additional coconut milk until your desired consistency is reached. Taste and adjust seasonings as desired. Serve hot with any of your favorite topp.

Ayurvedic Recipes – Chickpea Soup

Soups are perfect for cleansing the body of all toxins. They help with digestion and are nourishing and soothing too. Here is a fantastic Ayurvedic soup recipe with chickpeas that will soothe your appetite nicely.


  • 1 cup of soaked chickpeas, boiled until tender
  • 2 cups vegetable stock
  • pinch of saffron
  • 3 cups filtered water
  • 3 tablespoons leeks, sliced
  • 1 teaspoon Dijon mustard
  • 2 teaspoon tomato puree
  • 2 carrots, sliced thinly
  • 1/2 cup beet greens, sliced
  • one zucchini, sliced
  • 1 tablespoon coconut aminos
  • 1 tablespoon CCF mix (cumin, coriander, and fennel seeds), toasted and partially ground
  • 1/2 teaspoon black pepper
  • A pinch of Himalayan salt
  • 2 tablespoons lime juice
  • 1 cup coconut milk
  • 2 tablespoons fresh cilantro
  • A sprinking of cress
  • A sprinkling of sunflower sprouts


  1. Place all of the ingredients (including the liquids, but except for the coconut milk and cilantro) in a large stainless-steel sauce pan. Bring to a boil and then simmer for about 50 minutes.
  2. Add the coconut milk with seasoning (Himalayan salt and fresh ground black pepper), stir well, and continue to simmer for five minutes (add extra water or stock if necessary).
  3. Turn off the heat and add the cilantro. Serve hot with a sprinkling of sunflower sprouts and cress in each bowl.

Mediterranean Chickpea Salad


Texas is known for its good food and many Mexican restaurants will serve you excellent dishes. But, until that some Texas visit why not try something new in your kitchen. Vegetarian tortilla soup is a great recipe for lunch or dinner.  For this delicious soup, you will need frozen corn, avocado, tomato, black bean, tortilla strips.  Enjoy the taste of all these ingredients perfectly mixed in the soup.

1 1/2 Tbsp olive oil

1 1/2 cups diced yellow onion

1 cup diced bell pepper (any color)

1/2 cup peeled and diced carrots

1 small jalapeno, seeded and diced (omit if you don’t like spicy)

1 Tbsp minced garlic

Salt and freshly ground black pepper

6 cups vegetable broth

1 (15 oz) can petite diced tomatoes

2 cups fresh or frozen corn

2 1/2 tsp chili powder

1 1/2 tsp ground cumin

2 (15 oz) cans black beans, drained and rinsed

1 Tbsp fresh lime juice

1/3 cup (slightly packed) chopped cilantro

1 avocado, sliced or diced

Queso fresco or shredded Mexican blend cheese, for serving (optional)


Tortilla strips

8 (6-inch) corn tortillas

1 1/2 Tbsp olive oil


Preheat oven to 375 degrees. Heat 1 1/2 Tbsp olive oil in a large pot over medium-high heat. Add onion, bell pepper, carrot, and jalapeno and saute 4 minutes, add garlic and saute 1 minute longer.

Pour in broth, tomatoes, corn, chili powder, cumin and season lightly with salt and pepper to taste. Bring to a boil then reduce heat to medium-low, cover and simmer 15 minutes.

Add black beans and simmer 5 minutes longer. Stir in cilantro and lime juice. While the soup is cooking brush sides of tortillas with the 1 1/2 Tbsp olive oil. Then layer tortillas in stacks of 4 and cut each stack in half, then cut into small strips.

Separate strips and spread onto a greased 18 by 13-inch rimmed baking sheet, working to place them in a single layer, season lightly with salt. Bake in preheated oven 6 minutes toss then spread back out and bake 4 – 7 minutes longer until crisp. Let cool.

If serving all of the soup right away, stir half of the tortilla strips into a soup (otherwise wait to stir strips in until reheating the soup).

Serve soup with avocado slices, cheese if desired and more tortilla strips on top.
