My kids and husband love this Crockpot Potato Soup. You can garnish it with bacon, some heavy cream and cheddar (to add some color to otherwise pretty pale looking potato soup). I like serving it with lamb or beef, it is such a yummy combo!


  •  2 tablespoons unsalted butter*
  •  1 small yellow onion — diced
  •  3 large carrots — scrubbed and diced
  •  2 pounds Yukon gold potatoes — peeled and cut into 1/2-inch chunks
  •  1 teaspoon Italian seasoning
  •  1 teaspoon kosher salt — plus additional to taste
  •  1/4 teaspoon cayenne pepper
  •  3–4 cups reduced-sodium chicken broth
  •  1 (12-ounce) can 2% evaporated milk
  •  3 tablespoons cornstarch
  •  1 cup shredded sharp cheddar cheese — plus additional for serving
  •  1 cup nonfat plain Greek yogurt — plus additional for serving


  •  Cooked crumbled bacon
  •  Chopped fresh chives

  1. Lightly coat a 6-quart or larger slow cooker with nonstick spray. In a large skillet, melt the butter over medium heat. Add the onion and sauté until softened, about 6 to 8 minutes, stirring frequently and adjusting the heat so that the onion does not crisp or turn dark brown. Add to the slow cooker.
  2. To the slow cooker, add the carrots, potatoes, Italian seasoning, salt, cayenne, and 3 cups chicken broth. Stir to combine. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the potatoes and carrots are completely tender.
  3. While the vegetables cook, in a medium bowl, whisk together the evaporated milk and cornstarch until no lumps remain. During the last 30 minutes of cooking, add the cornstarch/milk mixture. Continue cooking for 30 additional minutes.

  4. Just before serving, stir in the shredded cheddar and Greek yogurt. With a potato masher or large spoon, mash half of the potatoes directly in the slow cooker. The soup will continue to thicken as it cools. If you would like the soup to be thinner, add the remaining 1 cup chicken broth until you reach your desired consistency (warm up the broth first). Stir to combine, then season with salt and pepper to taste. Serve hot, topped with bacon, chives, and additional cheese/Greek yogurt as desired.

This mouthwatering Crockpot BBQ Chicken is fantastic way to spice up your dull weekly menus. It will take 5 hours to cook  and you can store it refrigerated for up to 4 days. I usually use this shredded BBQ chicken and fill some buns, add lettuce, onions and tomato, to make a healthy version of burgers. You can also use tortillas instead of buns.


  •  1 1/2 cups  Homemade BBQ Sauce — or your favorite store-bought sauce (the homemade sauce only takes about 15 minutes to make and is totally worth it!)
  •  2 pounds boneless skinless chicken breasts
  •  1 tablespoon cornstarch — mixed with 1 tablespoon water to make a slurry
  •  Serving suggestions: whole wheat or pretzel buns — whole wheat tortillas, cheddar cheese, chopped green onion, baked sweet potatoes

  1. If you have not, prepare the Homemade BBQ Sauce.
  2. Lightly coat a 5-quart or larger slow cooker with nonstick spray. Arrange the chicken in a single layer on the bottom of the slow cooker. Top with sauce, spooning the sauce all over the top. If you made a batch of the Homemade BBQ Sauce, reserve the rest for serving.
  3. Cover the slow cooker, and cook for 1 1/2 to 2 1/2 hours on high or 4 to 5 hours on low, until the chicken is cooked through and reaches an internal temperature of 165 degrees F. Remove the chicken to a cutting board and shred with two forks, either on a cutting board or directly in the slow cooker.
  4. Thicken the sauce in the slow cooker: Add the slurry to the slow cooker with the remaining sauce. Whisk to combine, cover the slow cooker, and set to high. Let cook, stirring occasionally, until the sauce thickens, about 30 minutes.
  5. To thicken the sauce more quickly: Transfer the sauce to a medium saucepan. Whisk in the slurry, and then cook on the stovetop over medium heat, stirring often until the sauce thickens, 5 to 10 minutes. (If your slow cooker insert is stovetop safe, you can remove it from the slow cooker and place it directly on the burner, but do not do this unless you are POSITIVE your insert is stovetop safe or it may crack).
  6. Return the shredded chicken to the slow cooker and toss to coat. Serve chicken warm on buns for sandwiches, inside quesadillas, or (our favorite) on top of a baked sweet potato with a sprinkle of green onion. Add additional BBQ sauce as desired.

Beefy Mexican Rice Soup

Who doesn’t like burritos? Beef, rice, corn, tomatoes & beans – even kids just love this mix!

So the idea was to make a more healthy, cooked version of burritos (heavy dressings excluded).

You can use ready made taco seasoning mix, or you can make your own (oregano, cumin, garlic, onion, chili powder and cilantro). If you really like it spicy, just add more paprika powder!

Preparing time: one hour. If you have a slow cooker, it will even taste better (around three hours on the low temperature setting).

  • 2 pounds ground beef
  • 1/3 cup chopped onion
  • 1 teaspoons minced garlic
  • 3 tablespoons taco seasoning
  • 2 quarts beef stock
  • 2 cups frozen corn
  • 5 ounces black beans (rinsed and drained) 1 can
  • 5 ounces petite diced tomatoes (drained) 1 can
  • 1 cup tomato puree
  • 2 teaspoons lime juice
  • 2 teaspoons salt
  • 1 teaspoon cilantro
  • 1 cup whole grain rice

  1. In a large dutch oven, brown the ground beef, onion and minced garlic. Drain.
  2. Add in the taco seasoning and mix together.
  3. Add the beef stock, corn, black beans, diced tomatoes, tomato puree, lime juice, salt, cilantro and rice.
  4. Bring this to a boil, then cover and simmer for about 25-30 minutes until the rice is done.
  5. Serve with cheese, sour cream, and cilantro if desired.

Of course you can always use the canned cream corn as a side dish, but I really think this easy one-pot, slow cooker creamed corn, is so easy to make (just 5 ingredients) and so much tastier than canned versions, that it’s definitely worth a try.


  • 3 (15.25-ounces) cans whole kernel corn, drained
  • 1 cup milk
  • 1 tablespoon sugar
  • 1/4 teaspoon pepper
  • 8 ounces cream cheese, cubed
  • 1/2 cup (1 stick) unsalted butter, cut into thin slices

  1. Place corn into a slow cooker. Stir in milk, sugar and pepper until well combined. Without stirring, top with butter and cream cheese. Cover and cook on high heat for 2-3 hours.
  2. Uncover and stir until butter and cream cheese are well combined. Cover and cook on high heat for an additional 15 minutes.
  3. Serve immediately.
