Za’atar spiced mushrooms – this delicious Arabic appetiser is ideal for your meal prep routine. It can last in your fridge for up to 5 days and is a perfect companion and side dish to any kind of meat. I especially love combining these mushrooms with rice and curry chicken – a mix of Indian and Arabic cuisine.




  • 2 tbsp Tbsp Za’atar spice mix recipe on my website
  • 1 tsp cayenne Peppee
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 400 g mushroom
  • 10-12 Olives optional

  1. Heat up oil in a pan and toss sliced mushrooms in rosemary flavoured extra virgin olive oil.
  2. Sprinkle Za’atar in generous quantity and finished with sprinkle of cayenne pepper and good squeeze of lime.
  3. Serve piping hot may be with side of fresh pita bread
  4. If you like you can add olives too.

10-Minute Beef Teriyaki Skillet is so easy to make, it will take you only 10 full minutes! You can also use frozen diced onion and it will make the whole preparation process even faster! You can also freeze cooked meat for up to three months. Then just reheat in microwave or a saucepan and make some tortilla wraps with it!

  • 1 lb. extra lean ground beef I used 96% lean
  • 1 cup finely diced onion*
  • 1 teaspoon minced garlic
  • 1 teaspoon minced fresh ginger or about ¼ teaspoon dried ground ginger
  • ¾ cup thick teriyaki sauce such as Soy Vay Veri Veri Teriyaki Marinade & Sauce
  • Optional Garnish: sliced green onion toasted sesame seeds
  • For Serving: rice tortillas, or lettuce wraps

  1. In a large skillet preheat 1 teaspoon sesame oil over medium-high heat for about 1 minute. The sesame oil adds great flavor to the dish, but if you don’t have any you can substitute with canola or vegetable oil.
  2. Add beef, onion, garlic and ginger to the skillet. Cook, breaking up the meat as you stir, until the beef is no longer pink and the onion is tender (about 5-7 minutes). Drain, and return meat to skillet.
  3. Stir teriyaki sauce into the beef mixture. Bring to a low simmer and cook for an additional 3-5 minutes, just until sauce thickens slightly.
  4. Serve over rice, in tortillas, or in lettuce wraps.

One Pot Beef And Mushroom Stroganoff is as a one pot meal very easy to make. Plus it’s healthy and full of proteins thanks to the lean beef and mushrooms. You can even make it with mushrooms only, and you’ll have an amazing vegetarian dish! This rich and creamy pasta will leave you speechless!


  • 2 Tbsp butter
  • 2 cloves garlic
  • 1/2 lb ground beef
  • 8 oz fresh button mushrooms
  • Freshly cracked pepper
  • 2 Tbsp all-purpose flour
  • 2 cups beef broth*
  • 8 oz wide egg noodles
  • 1/3 cup sour cream
  • handful fresh parsley for garnish (optional)

  1. Mince the garlic. Add the garlic and butter to a large pot or skillet and sauté over medium heat for about one minute, or until the garlic is soft and fragrant. Add the ground beef and continue to sauté until it is fully browned.
  2. While the beef is browning, slice the mushrooms. Once the beef has browned, add the sliced mushrooms and some freshly cracked pepper to the pot. Continue to sauté until the mushrooms are soft (about five minutes). Add the flour and sauté for about two minutes more. The flour will coat the bottom of the pot and this is okay.
  3. Add the beef broth to the pot and stir to dissolve the flour off of the bottom. Add the uncooked egg noodles. Place a lid on the pot and allow the liquid to come up to a boil. As soon as it reaches a boil, give the pot a stir, replace the lid, and reduce the heat to low. Allow the pot to simmer for about 7-10 minutes, stirring the noodles and replacing the lid every couple of minutes. After 7-10 minutes the pasta should be tender and most of the liquid absorbed. Make sure the liquid is simmering the entire time. If not, increase the heat slightly.
  4. Once the noodles are tender, stir in the sour cream. Roughly chop a handful of parsley leaves and sprinkle over top. Serve hot.

Italian sausage butternut squash gnocchi

Today we are having One Pan Italian Sausage Butternut Squash Gnocchi – the creamiest gnocchi without actual cream being added to it! So delicious end filling, plus the butternut is added to extend the nutritious ingredients and to make it feel like autumn!


  • 5 tablespoons  unsalted butter — divided
  •  1 pound ground sweet Italian turkey sausage — removed from casings if needed
  •  1 small butternut squash — about 1 1/4 pounds, cut into 1/2-inch cubes (about 3 1/2 cups cubes total; if you have a little extra, use a very large skillet and add it all if you really love squash, or reserve the extra for another time)
  •  1 small yellow onion — diced, about 1 cup
  •  3 cloves garlic — minced
  •  1/2 teaspoon kosher salt — plus additional to taste
  •  1/4 teaspoon black pepper
  •  1 teaspoon rubbed sage — or 1 tablespoon chopped fresh sage
  •  1/4 teaspoon ground nutmeg
  •  1 1/2 to 2 cups low-sodium chicken broth
  •  1 pound potato gnocchi*
  •  5 cups loosely packed baby spinach — about 5 ounces or 5 generous handfuls
  •  1/4 cup freshly grated Parmesan — optional—we loved it both with and without
  •  Pinch red pepper flakes — optional

  1. Melt 1 tablespoon of Unsalted Butter in a very large skillet with a tight-fitting lid over medium high. Once the butter is melted, add the sausage. Cook, breaking apart the meat, until it is browned and cooked through, about 5 minutes. Transfer the sausage to a plate.
  2. Reduce the skillet heat to medium. Add the remaining 4 tablespoons butter. Once melted, add the squash and onion. Cook, stirring occasionally, until the squash is tender and golden, about 8 to 10 minutes. Add the garlic, salt, pepper, rubbed sage (if using fresh sage, wait to add it until the end), and nutmeg. Continue cooking until the garlic is softened and fragrant, about 1 additional minute.
  3. Add 1 1/2 cups chicken broth and gnocchi to the skillet. Increase the heat to medium high. Stir to coat the gnocchi, then cover the pan. Cook, covered, until the gnocchi is just tender, about 5 minutes. Uncover and stir in the sausage. Stir in the spinach a few handfuls at a time, allowing it to wilt. If you’d like a looser sauce, add a bit more chicken broth. Sprinkle with Parmesan and season to taste with additional salt, pepper, and red pepper flakes. Enjoy hot.

My kids and husband love this Crockpot Potato Soup. You can garnish it with bacon, some heavy cream and cheddar (to add some color to otherwise pretty pale looking potato soup). I like serving it with lamb or beef, it is such a yummy combo!


  •  2 tablespoons unsalted butter*
  •  1 small yellow onion — diced
  •  3 large carrots — scrubbed and diced
  •  2 pounds Yukon gold potatoes — peeled and cut into 1/2-inch chunks
  •  1 teaspoon Italian seasoning
  •  1 teaspoon kosher salt — plus additional to taste
  •  1/4 teaspoon cayenne pepper
  •  3–4 cups reduced-sodium chicken broth
  •  1 (12-ounce) can 2% evaporated milk
  •  3 tablespoons cornstarch
  •  1 cup shredded sharp cheddar cheese — plus additional for serving
  •  1 cup nonfat plain Greek yogurt — plus additional for serving


  •  Cooked crumbled bacon
  •  Chopped fresh chives

  1. Lightly coat a 6-quart or larger slow cooker with nonstick spray. In a large skillet, melt the butter over medium heat. Add the onion and sauté until softened, about 6 to 8 minutes, stirring frequently and adjusting the heat so that the onion does not crisp or turn dark brown. Add to the slow cooker.
  2. To the slow cooker, add the carrots, potatoes, Italian seasoning, salt, cayenne, and 3 cups chicken broth. Stir to combine. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the potatoes and carrots are completely tender.
  3. While the vegetables cook, in a medium bowl, whisk together the evaporated milk and cornstarch until no lumps remain. During the last 30 minutes of cooking, add the cornstarch/milk mixture. Continue cooking for 30 additional minutes.

  4. Just before serving, stir in the shredded cheddar and Greek yogurt. With a potato masher or large spoon, mash half of the potatoes directly in the slow cooker. The soup will continue to thicken as it cools. If you would like the soup to be thinner, add the remaining 1 cup chicken broth until you reach your desired consistency (warm up the broth first). Stir to combine, then season with salt and pepper to taste. Serve hot, topped with bacon, chives, and additional cheese/Greek yogurt as desired.
