12 Agar-Agar Kanten Diet Recipes – for Weight Loss and Health Benefits

Agar-Agar Kanten Diet Recipes are surprisingly healthy foods and diet that you will surely enjoy. Some may have known this already and some may have mistaken this as Gelatin because they almost look the same when prepared. These Agar-agar recipes are surely something to look at.

What is Agar-Agar?

Agar-agar or Agar is a plant-based jelly-like substance derived from seaweeds or red algae. This has been popular among culinary circles, especially in Asia, as an ingredient in desserts.

Furthermore, agar can also be used as vegetarian substitutes, laxatives, appetite suppressant, as a thickener in some foods, and even as a clarifying agent in brewing.

It is also known as Kanten. There are also other names like China glass, China grass, Japanese Kanten, Dai Choy Goh, Ceylon moss, or Jaffna moss.

Where does Agar-Agar come from?

Agar-agar is a Malay name of the red algae Gigartina and Gracilaria from which the jelly substance was obtained.

However, they were known to be discovered in Japan. It became the center of production until World War II. Nevertheless, after many years, the Agar became popular as a gelling agent in some Southeast Asian countries.

Furthermore, during the late 19th century, Agar-agar was started to be used as the base of microbiological media, because of its higher melting temperature, that allowed microbes to grow at higher temperatures without the media liquefying.

Thus Agar production increased rapidly.

Agar-Agar and Gelatin

agar-agar and gelatin may have looked the same. they are indeed both essentials in the preparation of many desserts. But the real difference between Agar and Gelatin is from where they were extracted.

Gelatin is made from livestock collagen such as animal skins, tendons, bone, and cartilages. While Agar came from a red algae plant.

Agar-agar and Gelatine are prepared differently. Agar needs to be boiled to be able to set firmly. It is white and translucent when set. On the other hand, gelatine can be dissolved in warm water to set. It is translucent, colorless, and odorless when set.

Agar-agar is sold in strands, powder, flakes, and bars, while the gelatine is in the form of powder, granules, and sheets.

Nutritional and Health Benefits of Agar-Agar

  • Agar has no calories, no carbs, no sugar, and is loaded with fiber. Moreover, it has no starch, soy, corn, gluten, yeast, wheat, milk, egg, and preservatives.
  • Agar is low in saturated fats and cholesterol.
  • Agar is high in calcium, folate, iron, manganese, magnesium, and vitamins.
  • It contains many antioxidants
  • It contains Omega 3 and Omega 6 fatty acids.
  • Because Agar is high in fiber, it improves digestion, enhances weight loss, relieves constipation, strengthens bones, and prevents anemia.
  • Keeps the bones healthy.

Therefore, Agar-Agar also helps in weight loss and at the same time keeps the body healthy.

Agar-Agar Kanten Diet

Agar-Agar Kanten Diet, or simply Kanten Diet is a diet that involves eating the product with meals or as a snack. It has almost no calories but surprisingly filling for being high in fiber.

Kanten literally means “cold sky” in Japan. This is because of the process of drying the trays of congealing agar in the sun on snow-covered rice fields practiced in many centuries.

In Japan, it is considered a traditional food. In fact, people in Japan have been eating agar for many years. It can be eaten fresh, though more often than not it’s freeze-dried and packaged.  The preparation is called tokoroten.

This Kanten Diet has no strict schedule when eating it. The only considerable advice is to eat some before any meals or as a snack and without sugar. Though sugar can be substituted with any sweetener if preferred sweet.

This diet seems to be based on a Japanese study in 2005 published in “Diabetes, Obesity & Metabolism.” The researchers studied two groups of overweight, type-2 diabetics. One group was on a regular diet and the other on a kanten-supplemented diet for 12 weeks. The kanten-supplemented group had more weight loss, lower fasting glucose levels, lower blood pressure, and lower cholesterol levels than the non-kanten group.

Agar-Agar Kanten Diet Recipes

To use Agar, always remember that Agar-Agar has to be dissolved first in water or in any liquid like milk, juices, stock, and others, and then brought to a boil.

As the ingredients cool down, the Agar will definitely set.

Better yet, follow the instructions on the package.

Follow this basic recipe and Kanten Diet Recipes will be a lot easier:

  1. Dissolve 1 tbsp agar flakes or 1 tsp agar powder in 4 tbsp hot water
  2. Bring water to a boil
  3. Simmer for 1 to 5 minutes for powder and 10 to 15 minutes for flakes
  4. Mix well with warmed ingredients
  5. Let it cool to set agar.

If you will  use Agar to thicken the liquid, you can follow this instruction:

  1. Agar flakes – use 1 tablespoon agar flakes to thicken 1 cup of liquid,
  2. Agar powder – use 1 teaspoon agar powder to thicken 1 cup of liquid.

How to cook bok choy ?

The crisp delicate taste of bok choy can be enjoyed by cooking this recipe. It is a  basic stir-fry and it  can be served simple, or you can add meat or tofu to make it more substantial. This Quick and easy recipe it is also very healthy, a fast way to  load up on leafy greens. Serve with  white rice it’s a very good and tasty idea.

Is bok choy good for you?
Bok choy is a great food to incorporate into your diet because of its low calorie content and many health benefits, such as cancer prevention, healthy digestion, and a hefty serving of many vitamins and minerals. It provides an insanely high level of vitamin A and C per serving

Bok choy benefits and recipe

What are the Bok Choy Benefits

Bok choy  contains brassinin, an antimicrobial and often antioxidative substance that’s a proven chemopreventive agent. Many studies have shown that inpiduals who consume multiple servings of cruciferous vegetables per week are at a lower risk of cancers, specifically prostate, colorectal, lung and breast cancer.

Reduces Inflammation

Many of the polyphenols found in this form of Chinese cabbage help reduce inflammation. Bok choy also provides vitamin K, which helps lower the risk of unwanted inflammation, which is at the root of many illnesses and can cause considerable damage if left untreated.

Helps Treat and Prevent Cancer

Incorporating bok choy into your regular diet can help decrease inflammation, fight free radical damage and give your body some of the most powerful tools it needs to fight disease. Cruciferous vegetables are known for their glucosinolates, sulfur-containing chemicals that sometimes cause a bitter flavor. During the preparation, chewing and digestion of these vegetables, other compounds — such as indole, nitrile and sulforaphane — that have proven anticancer effects are created. These compounds are effective against cancer because they can do things like help protect cells from DNA damage and inactivate carcinogens. This is partly why cruciferous veggies are some of the top cancer-fighting foods around.

Bok choy benefits and recipe

Strengthens Bones

Bok choy has a stellar lineup of nutrients that help promote bone health — including iron, calcium, phosphorus, magnesium and bone-building vitamin K. In addition, this superfood is a much healthier alternative to fat-filled milk for getting the RDA of calcium and preventing calcium deficiency.

Provides Antioxidant Power

Bok choy is among the top three vegetables on the aggregate nutrient density index. This means it delivers one of the highest levels of nutrients per calorie compared to other foods. Can bok choy help you lose weight? It may help you feel satisfied without overeating, which is why including vegetables in your diet is important for appetite control.

Free radicals can wreak havoc on the body, yet high-antioxidant foods like bok choy do a great job at scavenging these disease-causing molecules. Just one cup of this leafy vegetable can provide substantially more than your RDA of vitamin A and vitamin C, both of which are some of the most powerful antioxidant vitamins in the body. Beyond these traditional antioxidants, there are a number of phytonutrients and phenolic acids in cabbage varieties — such as caffeic acid, p-coumaric acid, ferulic acid and myricetin— that activate a number of beneficial antioxidant activities. When fermented, antioxidants in cabbages also become more bioavailable, according to some research.

Promotes Eye Health

Carrots are popularly known as the vegetable that helps keep eyes healthy, but thanks to substantial amounts of vitamin A and beta-carotene, bok choy is a serious contender. One cup provides the RDA of beta-carotene and over half of the RDA of vitamin A. The beta-carotene levels are high enough that the Macular Degeneration Association highly recommends it as a food that can help inpiduals suffering from macular degeneration — an eye disease that causes vision loss.

Aside from being an antioxidant that can help prevent infection, vitamin A is also very effective at preventing cataracts since it fights free radicals that damage our eyes and the rest of the body. Vitamin A foods can also help improve low-light vision and treat dry eyes and other eye-related diseases.

Ingredient Checklist

Step 1

Heat the oil in a large skillet or wok over medium heat, and cook the garlic in the hot oil until fragrant, 1 to 2 minutes.

Step 2

Mix in the bok choy, and cook and stir until the green parts of the leaves turn bright green and the stalks become slightly translucent, 5 to 8 minutes. Sprinkle with salt to serve.

Is bok choy toxic?

Bok choy benefits and recipe

Bok choy is commonly referred to as “goitrogenic.” This means it contains chemicals that can interfere with the production of thyroid hormones. For people with thyroid dysfunction, there is concern cruciferous vegetables and other goitrogenic foods are related to inflammation, iodine metabolism issues and overall thyroid malfunction.

More up-to-date research has shown that very few circumstances allow for goitrogenic foods to have a negative effect on the thyroid, and the number of beneficial nutrients found in foods like bok choy outweigh concerns about the thyroid. If you suffer from thyroid issues, speak with your doctor before consuming bok choy./.

Shirataki Noodles – Best Noodles for Every Diet + 16 Recipes

Shirataki noodles are the best noodles for every diet, except, of course, for the carnivore diet. These are translucent and gelatinous traditional Japanese noodles that are made from the konjac plant which is grounded and shaped into various types of pasta and rice. These noodles are completely different from the carb-rich ramen noodles.

Moreover, Shirataki noodles are made from a type of fiber called glucomannan found in Asian konjac plant. It has no carbs and almost no calories and have traces of protein, fat, and calcium. They are 97% water and 3%fiber. Specifically, in every 100grams / 3.5 oz of noodles, there are only 4 calories and roughly 1 gram of net carbs. These make them perfect for any diet.

    Other names

These noodles are also called miracle noodles, glucomannan noodles, konjac noodles, or konnyaku noodles. They also vary in appearances, too, such as spaghetti, angel hair, and fettuccine. There is also Shirataki rice that, of course, looks like rice. You can see these names in their packaging as well.

What health benefits do we get from Shirataki noodles?

Studies show that fiber glucomannan has many properties that can improve health, thus help in losing weight. Here are some of the health benefits this fiber can do.

    • Glucomannan is a highly viscous fiber that functions as prebiotics, thus it nourishes the friendly gut bacteria and improves gut health.
    • It promotes satiety that keeps us fuller with less food for a longer period that may cause a reduction of calories, hence may lead to weight loss.
    • It improves several risk factors for heart disease that includes total cholesterol, triglycerides, and fasting blood sugar.
    • Glucomannan is an effective treatment for constipation in children and adults because of its laxative effect and benefits fo gut health.

    Are there any side effects?

Indeed, like other foods, glucomannan has different effects on different people. However, adverse effects can only be mild and only a few people have reported these experiences:

    • It may cause mild digestive issues such as bloating, loose stools, and gas.
    • It may reduce the absorption of certain oral medications and supplements. To avoid this, take your medication 1 hour before, or 4 hours after eating Shirataki noodles.

Where to buy these Shirataki noodles?

This depends on where you live. Even in some part of Asia may not be readily available in the market. But surely, they are readily available online, and surprisingly, there are many sellers you can find and very easy to order.

Furthermore, as these noodles are becoming very popular for dieters, most especially for very low-carb, keto diets, they are already appearing in some grocery stores and supermarkets such as Walmart, Whole Foods, and in some Asian grocery stores as well.

Please note that Shirataki noodles are different from Tofu Shirataki noodles. The later is made of Konjak fruit and Tofu. This article is all about Shirataki Noodles only.

How to prepare Shirataki Noodles before cooking them.

There are instructions on the back of the packaging. The direction usually says that you have to rinse and drain, and then boil and dry on the stove using a skillet. This will remove excess water and allows the noodles to take on more noodle-like texture, thus makes it ready to soak up the saucy goodness in your meals. However, there is another way to do it.

    Here is another recommendation:

    1. Drain the noodles and then rinse with hot water. Repeat up to 5 times.
    2. Dry them well using a cloth or paper towel to remove extra moisture.
    3. Put the noodles in a non-stick pan and dry fry them for 6-8 minutes or until they become firmer when touched.
    4. During dry frying, separate and turn them over with tongs to dry the noodles evenly.
    5. The noodles are now ready for any recipes you’d like to cook it.

The noodles may have fishy-smelling liquid. These are just plain water that absorbed the odor of konjac fruit. All you need to do is to rinse them well under running water for a few minutes or place them in a pot of boiling water for 2-3 minutes.

Now, get ready for the recipes.

22 FAT BURNING FOODS TO EAT For Men and Women

SAUERKRAUT – Health Benefits with Highest Vitamin C and How to Make It

Do you know that Sauerkraut has impressive Health Benefits with Highest Vitamin C and a good source of probiotics? We will also show you how to make it, too. We collected 10 recipes of Sauerkraut varieties that you can try.

Sauerkraut is a preserved cabbage through the process of Lacto-fermentation. It is made by mixing shredded fresh cabbage and salt and then pressing down the mixture which releases water, thus, causes fermentation.

This process produced beneficial probiotics or live bacteria. One of those bacteria is called lactobacillus which is commonly found in yogurt and other cultured products. With these probiotics,  sauerkraut produces such major health benefits that surpass far beyond that of the fresh cabbage.

The bacteria ferment the sugars in the cabbage leaves. As a result, some various lactic acid bacteria formed which produced a distinctively sour flavor. Although it originated in China, it is also known that this fermented cabbage was well appreciated in Germany where the name Sauerkraut (sour cabbage) comes from.

    Vitamins and Mineral in Sauerkraut

Vitamins found in Sauerkraut are Vitamins A, B Vitamins, C, K, and U. While the minerals are Iron, potassium, iodine, calcium, magnesium, manganese, and sodium. Traced amounts of phosphorus, chlorine, cobalt, fluorine, silicon, boron, copper, zinc, sulfur, and selenium are also present.

    Vitamin C in Sauerkraut

Vitamin C, also called Ascorbic Acid, is an essential nutrient which means that the body can’t produce on its own. It has high antioxidant properties that strengthen the body’s immune system.

The recommended daily intake of Vitamin C is 75 mg for women and 95 mg for men. One cup of fresh cabbage has 30 mg of Vitamin C. But, according to studies, when fermented and made into Sauerkraut, it can go up to almost 700 mg per cup. Indeed, it is 20 times more Vitamin C than in plain cabbage. This is what makes Sauerkraut special besides being rich in probiotics.

    Vitamin U

Vitamin U is also known as  S-methyl methionine. This vitamin may not be always heard because this is not considered as a vitamin. It is a substance found in cabbage juice, which is a derivative of methionine. This substance encourages the healing of peptic ulcers. Furthermore, according to some studies, it can also help remove allergic reactions to tobacco smokes.

    Vitamin K

Vitamin K has a key function in helping to prevent excessive bleeding as well as help build and maintain healthy bones.

Potassium is the third most abundant mineral in the body. As part of electrolytes, this mineral helps maintain the heart, brain, kidney, muscle tissue, and other important organ systems of the human body in good condition. A cup of sauerkraut already contains 400 milligrams of Potassium.

Sodium is among the electrolytes and works in association with potassium to perform important tasks within the body. Sodium is needed for muscle contraction, helps send nerve impulses, and balances fluids in the body. It is also a component in Salt or Sodium Chloride (40% Sodium and 60% Chloride). Salt is one of the main ingredients of Sauerkraut and part of the fermentation process.

For every cup of sauerkraut, it contains 938 mg of Sodium, where the recommended Daily Value is  1,500mg up to 2,300mg.

While sodium still has very confusing information on how much you should be taking daily, consider the diet you are currently on. When in a very low carb, such as ketogenic diet,  it is advised to increase the electrolyte intakes which include sodium because the diet is anti-inflammatory.

However, there are insights about sodium being proven in the new studies.

All vitamins and minerals in fresh sauerkraut are equally important and play significant roles for the health and normal function of the body.

12 Major Health Benefits in Sauerkraut

There is a long list of Sauerkraut Health Benefits due to the fact that Sauerkraut is very rich in probiotics, packed with antioxidants, rich in fiber, and full of nutrients. Below are among the health benefits that you will gain if you include the fermented cabbage in your diet:

    1. Sauerkraut is very nutritious. Of course, it has to be on top of the list. As mentioned above, Sauerkraut is rich in vitamins and minerals, with the highest Vitamin C of up to 700 mg in 1 cup of fresh sauerkraut. Hence, it is also called the Superfood.
    2. Sauerkraut increases Iron absorption. For this reason, women during menstruation and pregnancy, and even endurance athletes are well benefited.
    3. Boosts Immune system. Sauerkraut is indeed a great source of immune-boosting probiotics and nutrients. Regular consumption will reduce the risk of infection such as cold, flu, and Urinary Tract Infection. It will help you recover faster as well when you are sick.
    4. Great for gut health. Improves the bacterial balance in your gut, thus, improves overall digestion and health mainly because of probiotics. It is also effective in combating several bowel diseases such as irritable bowel syndrome, diarrhea, constipation, bloating as well as symptoms linked to Crohn’s disease and ulcerative colitis.
    5. Prevents and reduces symptoms of food allergies. These include lactose intolerance, milk protein allergy, and others.
    6. Reduce the risk of certain cancers. This is due to antioxidants and beneficial plant compounds that the sauerkraut contains. A study shows that women consuming 3 or more servings per week had a 72%lower risk of breast cancer than those who ate less than 1.5 servings per week.
    7. Alleviation of arthritis inflammation. This is due to antioxidants and rich probiotics in sauerkraut, thus, causing anti-inflammatory effects.
    8. Promotes heart health. Sauerkraut contains high choline concentration which regulates blood composition thus, helps prevent hypertension. Moreover, Sauerkraut is one of the rare plant sources of Vitamin K, particularly Vitamin K2, which helps reduce the risk of heart disease by preventing calcium deposits from building up in the arteries.
    9. It helps promote weight loss. Probiotics in Sauerkraut balances gut microflora to ensure good work of the immune system. And because excess weight is connected with chronic inflammation, probiotics help to lose weight. Eating too many carbohydrates and sugar causes sick gut flora. Because intestinal bacteria need sugar to live, they also send signals to the brain to consume more sugary foods, thus, people gain weight, which may also result in obesity, diabetes, and many others. Note that only traditional sauerkraut recipes are effective for weight loss and balanced gut flora.
    10. It helps maintain brain health and reduces stress. Studies show that probiotics in sauerkraut help improve memory and reduce symptoms of depression, anxiety, autism, and even obsessive-compulsive disorder. Moreover, it also maintains brain health by increasing the gut’s absorption of mood-regulating minerals such as magnesium and zinc.
    11. It helps keep the bone stronger. Vitamin K2 in sauerkraut activates the proteins that bind the mineral found in bones, which is the calcium, thus, it makes the bone stronger and healthier.
    12. Improves skin condition. Indeed, sauerkraut helps in the prevention and treatment of acne and wrinkles. Furthermore, healthy bacteria in the gastrointestinal tract aids in the healing of inflamed skin. A healthy digestive system is truly vital for overall health which also includes the skin.

    How to make Sauerkraut

There are several varieties of Sauerkraut depending on the region they were made. They are kept to ferment from 1 week up to several months. When fermented for only 3 to 7 days, the sauerkraut has a mild result where there is only very little production of lactic acid.

Keep in mind that sugar affects the fermentation process and may have poor results and fewer health benefits. Therefore, don’t use ingredients with high sugar content if you prefer a sauerkraut with the best health benefits.

The kind of salt to be used can also affect the end result of the product. Himalayan Pink Salt is highly recommended for its nutritional value. While Iodized or common table salt is not advisable. You can use this guide.

Furthermore, traditional sauerkraut gives off the most health benefits. It consists of cabbages and salt only and fermented in one month or more to get the best result. It is said that red or purple cabbage makes the highest nutritional value especially Vitamin C, but other cabbages will do fine as well. You can have a look at what vegetables you can use here.

Most of the ingredients call for 5 lbs of shredded cabbage (include the weight of other vegetables if you are adding). You can use this proportion below if you prefer to make less.

    • 2.2 lbs or 1 kg cabbage, any variety
    • 3 – 4 tsp Himalayan Pink Salt

For variety, you can add one or more of the following: caraway, carrots, ginger, garlic, beets, apple, pineapple, etc.

For directions, follow the steps given with the recipes below.

Read these TIPS first. You might find them helpful.

    • For the jar. You can use a large mason, canning, or pickling jar. Clean it well. There is no need to sterilize it as good bacteria will take over during fermentation.
    • During preparation, you can mix the shredded cabbage and salt for a minute and leave aside for 30 minutes. The mixture will become watery. And then you can start massaging the mixture as directed in the procedure.
    • To use as weight to keep the cabbage under the brine, most of the advice is to use a small jar with stones in it to press down the cabbages. Another suggestion is, instead of a small jar and stones (if you can’t find one or don’t want to use stones), use a clean ziplock plastic, place it inside the jar and fill the bag with water to the tip. It is important that there is no air inside and keep the vegetables under the liquid.
    • Use a whole clean cabbage leaf and place it over the sauerkraut before placing the weight in. You can cut it to the diameter (a little wider) of the jar, or just fold it in.
    • If you are going to use a regular mason jar, when closing the jar, don’t close too tight to allow excess gas to escape. During fermentation, gas will develop. Place the jar on a tray to catch the overflowing liquid as gas develops.
