How To Cook Moi Moi

Moi moi (also called moin moin) is a delicious, savory steamed bean pudding made commonly in Nigeria from a mixture of blended black eyed peas or beans, peppers, onions, and spices.

What is MOI MOI?

If you ask me what my favorite food was, I would have said moi moi.  It remains close to the top of the list. Moi moi (also called moin moin) is a  delicious, savory Nigerian bean pudding made commonly in Nigeria from a mixture of blended and steamed black eyed peas or beans, peppers, onions, and spices.  This moin moin/moi moi recipe uses smoked trout, but you can switch it out for any other cooked fish, corned beef, boiled eggs, or omit the animal protein altogether and make it vegan.

  • 1.5 cups of black eyed peas
  • 1/2 large bell pepper
  • 2 scotch bonnet/ habanero peppers
  • 1/2 cup neutral unflavored oil I used sunflower oil
  • 1/2 large onion I used a red onion
  • 8 oz smoked de-boned fish broken into small pieces
  • 3 tsp bouillon
  • 3 tsp salt or salt to taste
  • 1/4 – 1/2 cup hot boiling water
  • 3-4 broad sheets of banana leaves

  • To skin the beans, soak the beans in water for 3 minutes, after about 3 minutes, the skin of the beans should start wrinkling a little bit.
  • Place the beans in a food processor, with water, just enough to cover it, then pulse the food processor about 5- 6 times to agitate the beans. This process breaks the beans up and separates the skins from the beans. Watchout for splashing water!
  • Pour the skinned beans in a bowl. Rinse several times to wash off any loose skin, draining the skins with the water with each rinse. The skins should come off easily because the skins are lighter and should float easily to the top.
  • Once the beans are clean, soak them in water for at least 4 hours or over night.
  • After the beans have soaked, drain the water that they have been soaking in, and rinse the beans one more time.
  • Blend the beans with 1 cup of water, the bell pepper, scotch bonnet peppers, onions and bouillon.
  • Place the blended beans in a bowl, mix in the oil and salt thoroughly then thin out the mixture with the hot water until it resembles the texture of a light cake batter (you may need less than 1/2 a cup of hot water, just make sure the texture is like a light cake batter).
  • You can taste the mixture to adjust for salt (it is will not taste good at this point since the beans are raw but at this point you are just tasting for seasoning).
  • Prep the ramekins by brushing each one with oil on the inside like you would a cake pan. Fill each ramekin with the mixture till it is about 3/4 full, and then top it with a piece of fish.
  • In a deep pot with a properly fitted pot cover, place a sheet of banana leaf, and pour boiling water into the pot till it is about 1 inch deep. Place the ramekins into the pot, on top of the banana leaves. The hot water should not be more than half way up the ramekin. Cover the ramekins with a sheet of banana leaf
  • Depending on how wide your pot is, you may need to layer the ramekins in the pot. To do that, simply place the additional ramekins over the second sheet of banana leaf that covered the first layer of ramekins, then cover that layer with another sheet of banana leaf.
  • Cover the pot, and allow it to steam on low heat for 50 minutes. After 50 minutes, check the the Moi moi. Just like a cake, a skewer inserted into the middle of it should come out clean. If it doesn’t, allow it to continue steaming for another 10 minutes.
  • Allow the Moi moi to sit for 5 minutes then serve warm in the ramekin or unmolded.

Moi moi recipe and details

Is Moi Moi a snack?

It also is called ponmo by Nigerians. Moi moi – Moi Moi is made up of beans, crayfish, seasoning, and tomato puree. Moi Moi are usually wrapped with leaves, cellophane bags and small plastic plates at restaurants. Fried yams – One of the most affordable street snacks in Nigeria.
Using a blender this is one of the fastest ways
of peeling beans so watch to the end to find out the perfect way to oull the beans.I’ll simply
let the pins rest for five minutes or soda water then transfer it into the blender to get away the water on my blender. For the rest of the procedure please check the attached video

What does Moi Moi taste like?

Both the texture and taste of moi moi is quite hard to describe, to be honest. I guess the best way to describe it would be to say that it tastes a bit like jollof rice (another traditional Nigerian delicacy), with the texture of soft boiled egg.

How do you clean beans for Moi Moi fast?

Your blender has a lot of functions just that you have not yet figured out. I use my blender to peel beans easily without much waste of time especially whenever I want to make moi-moi or akara. Apart from blending tomato and pepper, you an also use your blender to peel your beans easily, what a fast way to peel bean faster. See the details here on this video:

This Quick and easy recipe it is also very healthy, a fast way to  load up on leafy greens. Serve with  white rice it’s a very good and tasty idea.

Is bok choy good for you?
Bok choy is a great food to incorporate into your diet because of its low calorie content and many health benefits, such as cancer prevention, healthy digestion, and a hefty serving of many vitamins and minerals. It provides an insanely high level of vitamin A and C per serving

Bok choy benefits and recipe

What are the Bok Choy Benefits

Bok choy  contains brassinin, an antimicrobial and often antioxidative substance that’s a proven chemopreventive agent. Many studies have shown that inpiduals who consume multiple servings of cruciferous vegetables per week are at a lower risk of cancers, specifically prostate, colorectal, lung and breast cancer.

Reduces Inflammation

Many of the polyphenols found in this form of Chinese cabbage help reduce inflammation. Bok choy also provides vitamin K, which helps lower the risk of unwanted inflammation, which is at the root of many illnesses and can cause considerable damage if left untreated.

Helps Treat and Prevent Cancer

Incorporating bok choy into your regular diet can help decrease inflammation, fight free radical damage and give your body some of the most powerful tools it needs to fight disease. Cruciferous vegetables are known for their glucosinolates, sulfur-containing chemicals that sometimes cause a bitter flavor. During the preparation, chewing and digestion of these vegetables, other compounds — such as indole, nitrile and sulforaphane — that have proven anticancer effects are created. These compounds are effective against cancer because they can do things like help protect cells from DNA damage and inactivate carcinogens. This is partly why cruciferous veggies are some of the top cancer-fighting foods around.

Bok choy benefits and recipe

Strengthens Bones

Bok choy has a stellar lineup of nutrients that help promote bone health — including iron, calcium, phosphorus, magnesium and bone-building vitamin K. In addition, this superfood is a much healthier alternative to fat-filled milk for getting the RDA of calcium and preventing calcium deficiency.

Provides Antioxidant Power

Bok choy is among the top three vegetables on the aggregate nutrient density index. This means it delivers one of the highest levels of nutrients per calorie compared to other foods. Can bok choy help you lose weight? It may help you feel satisfied without overeating, which is why including vegetables in your diet is important for appetite control.

Free radicals can wreak havoc on the body, yet high-antioxidant foods like bok choy do a great job at scavenging these disease-causing molecules. Just one cup of this leafy vegetable can provide substantially more than your RDA of vitamin A and vitamin C, both of which are some of the most powerful antioxidant vitamins in the body. Beyond these traditional antioxidants, there are a number of phytonutrients and phenolic acids in cabbage varieties — such as caffeic acid, p-coumaric acid, ferulic acid and myricetin— that activate a number of beneficial antioxidant activities. When fermented, antioxidants in cabbages also become more bioavailable, according to some research.

Promotes Eye Health

Carrots are popularly known as the vegetable that helps keep eyes healthy, but thanks to substantial amounts of vitamin A and beta-carotene, bok choy is a serious contender. One cup provides the RDA of beta-carotene and over half of the RDA of vitamin A. The beta-carotene levels are high enough that the Macular Degeneration Association highly recommends it as a food that can help inpiduals suffering from macular degeneration — an eye disease that causes vision loss.

Aside from being an antioxidant that can help prevent infection, vitamin A is also very effective at preventing cataracts since it fights free radicals that damage our eyes and the rest of the body. Vitamin A foods can also help improve low-light vision and treat dry eyes and other eye-related diseases.

Ingredient Checklist

Step 1

Heat the oil in a large skillet or wok over medium heat, and cook the garlic in the hot oil until fragrant, 1 to 2 minutes.

Step 2

Mix in the bok choy, and cook and stir until the green parts of the leaves turn bright green and the stalks become slightly translucent, 5 to 8 minutes. Sprinkle with salt to serve.

Is bok choy toxic?

Bok choy benefits and recipe

Bok choy is commonly referred to as “goitrogenic.” This means it contains chemicals that can interfere with the production of thyroid hormones. For people with thyroid dysfunction, there is concern cruciferous vegetables and other goitrogenic foods are related to inflammation, iodine metabolism issues and overall thyroid malfunction.

More up-to-date research has shown that very few circumstances allow for goitrogenic foods to have a negative effect on the thyroid, and the number of beneficial nutrients found in foods like bok choy outweigh concerns about the thyroid. If you suffer from thyroid issues, speak with your doctor before consuming bok choy./.

Insanely Delicious Dairy Free Lasagna

Have you tried dairy-free lasagna? If not, then this is the right article for you. This is an insanely delicious lasagna that is made with just eight ingredients. You can also adapt this recipe to your diet if you want a gluten-free, soy-free or vegetarian variant. So, take a look and try this great recipe for dairy-free lasagna!

How to make dairy-free lasagna

If you take a quick glance at the recipe, it might seem like a lot of steps – but I promise, this is easy to make! A lot of things are done simultaneously so it doesn’t take a ton of time to prep this.

To make this, you’ll only need 8 simple ingredients:

  • Olive oil
  • Mushrooms
  • Spinach
  • Lasagna noodles
  • Onion
  • Ground beef (can skip this if you’re vegetarian)
  • Pasta sauce
  • Fauxcotta (a ricotta substitute)

Once you’ve got all your ingredients, there are three prep steps for this dairy free lasagna:

1) Prep your lasagna noodles – I get the water going at the start and add them in when it’s boiling, that way they’re cooking while I’m prepping the next two things

2) Prep your veggies – For this, you’ll sauté the mushrooms and spinach in the olive oil.

3) Prep your meat sauce – You’ll saute the ground beef and onion (shown below) then mix it up with pasta sauce.

Dairy free lasagna 1

After that, you’ll just layer the ingredients and bake!

Here’s how I like to layer them:

Layer 1:

  • Little pasta sauce that you’ve set aside, spread on the bottom of the dish
  • 3 noodles
  • 1/2 fauxcotta
  • 1/2 spinach/mushroom mixture
  • 1/3 meat sauce

Layer 2:

  • 3 noodles
  • 1/2 fauxcotta
  • 1/2 spinach/mushroom mixture
  • 1/3 meat sauce

Layer 3:

  • 3 noodles
  • 1/3 meat sauce

What is Fauxcotta and where do I get it?!

Fauxcotta is a ricotta substitute made by Barrett’s Garden. It’s a tofu base that’s pre-seasoned with Italian herbs like oregano and basil. I think it’s extremely similar to ricotta when used in lasagna or stuffed shells!

Currently, the product is primarily available in the Northeast. If you visit the Barrett’s Garden website and click on “about” it will bring up the locations where you can find it. If you happen to be local in Central Massachusetts, we grabbed ours at Matchstick Market in Clinton (a weekly market with plant-based foods, artisanal products, and local artists – really cool).

Also, you can try using one of the other ricotta substitutes on the market that you can find locally.

Dairy free pasta sauces

I used a jarred dairy free sauce to make this recipe easy, but you can also certainly use your own favorite homemade sauce.

You do have to be careful with jarred sauces as some do contain dairy. Here are some of the options on the market that appear to be dairy free at the time of this post. This is by no means a comprehensive list, but just a few examples that I’ve come across!

*Important: Please always check the label when you purchase, as manufacturers can frequently change formulations and add new allergens.

Dairy free lasagna 2

Allergens in this lasagna

This lasagna is free of dairy, nuts, and fish. It also does not naturally contain egg, though some people who are sensitive to eggs will want to note that certain pasta products are made in shared facilities with egg – just something to double check on the label.

The recipe does contain soy and gluten (but you can find modifications below).

Dietary Modifications

Here are easy ways to modify this recipe if you need to fit certain allergy eliminations or dietary preferences:

Gluten free – Use gluten free pasta noodles rather than traditional lasagna noodles. An easy substitute! (All the other ingredients I chose for those were gluten free).

Vegetarian – Just leave out the beef! The spinach and mushroom add lots of heartiness to this – the recipe will work just fine without meat.

Soy free – The ricotta substitute (Fauxcotta) used in this lasagna is soy based, and is by far the closest thing I’ve found to regular ricotta. However, that presents a bummer for those of ya’ll allergic to soy! Here are two recipes you might be able to use as a substitute:

 Cook Time – 45 minutes

 Total Time – 1 hour 5 minutes

Author – Dairy Free for Baby

  • 1 tbsp olive oil
  • 2 cups chopped baby portabella mushrooms, chopped roughly
  • 5 ounces baby spinach, chopped roughly
  • 9 lasagna noodles
  • 1 pound ground beef (recommend 85/15)*
  • 1/2 red onion, diced
  • 24 ounce jar of pasta sauce (double check dairy free)
  • 16 ounces Barrett’s Garden fauxcotta (or another dairy-free ricotta substitute)

  1. Preheat oven to 350 degrees. Also, fill a large pot with water and set it over high heat on the stove, as you’ll use this to boil the lasagna noodles.
  2. Heat 1 tbsp olive oil in a large skillet over medium heat. Add mushrooms and cook for about 5 minutes, until tender.
  3. Stir in spinach and cook for another 2 minutes, until the spinach is lightly wilted. Set the veggie mixture aside in a bowl.
  4. By this point, your water should be boiling. Place the lasagna noodles in and cook according to package directions. Drain them when done.
  5. Meanwhile, while noodles are cooking, you’ll prepare the meat sauce. Wipe out the skillet you used for the veggies, and return to medium heat. Add your ground beef and red onions. Brown the ground beef, around 5-7 minutes. If needed, drain any excess fat from the skillet (this will depend on the fat percentage of the meat used).
  6. Set aside 1/3 cup pasta sauce, and then dump the remaining sauce into the skillet with the meat. Cook for 2 minutes, then remove from heat.
  7. In a 13×9 baking dish, spread the 1/3 cup pasta sauce on the bottom. Add your first three lasagna noodles. Layer first with 1/2 the fauxcotta, 1/2 the spinach/mushrooms, and 1/3 meat sauce. Add your next layer of lasagna noodles and repeat. Then add the final layer and top with the remaining meat sauce.
  8. Cover with foil and bake for 35 minutes at 350 degrees. Remove the foil and continue baking for an additional 10 minutes uncovered. Let cool for a few minutes and enjoy!

Recipe Notes

  • The ground beef is optional; you can skip if you’re vegetarian.
  • I used Prego Roasted Garlic and Herb pasta sauce, which at the time of this post is dairy free.
  • To drain excess fat from the skillet, you can just push the meat/onion mixture to one side, tilt the skillet, and remove the grease with a large spoon.
