All you need are Peanuts, an oven or a large skillet or wok, and a food processor. And of course some jars or any container where you will place your peanut butter.

For a variety and added flavor, you can add some fine sea salt or pink salt and sweetener of your choice. You can also add butter. If you don’t like dairy, you can add coconut oil or olive oil or not add anything at all.

Peanut butter can be made with roasted peanuts, with or without added oil. Or just make it with raw peanuts. It is said to be more nutritious.

Here is the Healthy Peanut Butter Recipe

Ingredients:

  • 250 g Raw Peanuts, skinned
  • Pinch of fine sea salt or Pink salt (depends on how salty you want it to be, optional)
  • Erythritol or Stevia or Sweetener of your choice (depends on how sweet you want it to be, optional)
  • 1 – 2 Tbsp Unsalted Butter (optional)

Directions:

  • To roast peanuts, in the oven, preheat oven to 350°F. 
  • Place the peanuts in the baking sheet spreading evenly and roast for 20 minutes stirring at least twice. If you prefer to use a large skillet or wok to roast peanuts instead of the oven, make sure to stir more often.
  • Cooldown the peanuts for a few minutes and then place them in a food processor along with the other ingredients.
  • Blend for 5 minutes or until smooth. Scrape the side from time to time for better blending.
  • Place in a jar and refrigerate up to 1 month (or longer).

Note

  • You may opt to not roasting the peanuts. Just follow the instructions with raw peanuts.
  • If you like it crunchy, save a cup of peanuts. Blend the rest of the ingredients. At the last minute, place the save peanuts in the food processor and blend.

What is Agar-Agar?

Agar-agar or Agar is a plant-based jelly-like substance derived from seaweeds or red algae. This has been popular among culinary circles, especially in Asia, as an ingredient in desserts.

It is also known as Kanten. There are also other names like China glass, China grass, Japanese Kanten, Dai Choy Goh, Ceylon moss, or Jaffna moss.

Where does Agar-Agar come from?

Agar-agar is a Malay name of the red algae Gigartina and Gracilaria from which the jelly substance was obtained.

However, they were known to be discovered in Japan. It became the center of production until World War II. Nevertheless, after many years, the Agar became popular as a gelling agent in some Southeast Asian countries.

Furthermore, during the late 19th century, Agar-agar was started to be used as the base of microbiological media, because of its higher melting temperature, that allowed microbes to grow at higher temperatures without the media liquefying.

Thus Agar production increased rapidly.

Agar-Agar and Gelatin

agar-agar and gelatin may have looked the same. they are indeed both essentials in the preparation of many desserts. But the real difference between Agar and Gelatin is from where they were extracted.

Gelatin is made from livestock collagen such as animal skins, tendons, bone, and cartilages. While Agar came from a red algae plant.

Agar-agar and Gelatine are prepared differently. Agar needs to be boiled to be able to set firmly. It is white and translucent when set. On the other hand, gelatine can be dissolved in warm water to set. It is translucent, colorless, and odorless when set.

Agar-agar is sold in strands, powder, flakes, and bars, while the gelatine is in the form of powder, granules, and sheets.

Nutritional and Health Benefits of Agar-Agar

  • Agar has no calories, no carbs, no sugar, and is loaded with fiber. Moreover, it has no starch, soy, corn, gluten, yeast, wheat, milk, egg, and preservatives.

Agar-Agar Kanten Diet

Agar-Agar Kanten Diet, or simply Kanten Diet is a diet that involves eating the product with meals or as a snack. It has almost no calories but surprisingly filling for being high in fiber.

Kanten literally means “cold sky” in Japan. This is because of the process of drying the trays of congealing agar in the sun on snow-covered rice fields practiced in many centuries.

In Japan, it is considered a traditional food. In fact, people in Japan have been eating agar for many years. It can be eaten fresh, though more often than not it’s freeze-dried and packaged.  The preparation is called tokoroten.

This Kanten Diet has no strict schedule when eating it. The only considerable advice is to eat some before any meals or as a snack and without sugar. Though sugar can be substituted with any sweetener if preferred sweet.

This diet seems to be based on a Japanese study in 2005 published in “Diabetes, Obesity & Metabolism.” The researchers studied two groups of overweight, type-2 diabetics. One group was on a regular diet and the other on a kanten-supplemented diet for 12 weeks. The kanten-supplemented group had more weight loss, lower fasting glucose levels, lower blood pressure, and lower cholesterol levels than the non-kanten group.

Agar-Agar Kanten Diet Recipes

To use Agar, always remember that Agar-Agar has to be dissolved first in water or in any liquid like milk, juices, stock, and others, and then brought to a boil.

As the ingredients cool down, the Agar will definitely set.

  1. Dissolve 1 tbsp agar flakes or 1 tsp agar powder in 4 tbsp hot water
  2. Bring water to a boil

  5. Let it cool to set agar.

  •  tsp pink Himalayan salt
  • 1 cup Unsweetened Almond Milk
  • 1 tbsp Lemon Juice
  •  cup Strawberries
  • ¼ cup Maple Syrup

Instructions

  1. Soak cashew nuts in water for about 3 hours or until softened.

INSTRUCTIONS
Panna Cotta
  1. Sprinkle gelatine over cold water in a bowl and let stand 2 minutes to soften
  2. Combine the sour cream, milk, sugar, and vanilla in a saucepan and slowly heat stirring continuously
  3. Once the gelatine is soft, remove from the water, squeeze out excess and add them to the cream mix
  4. Whisk until the gelatine has dissolved
  5. Divide the cream into 6 ramekins or little bowls
  6. Let them sit for 2 hours in the fridge
Coulis
  1. Puree Raspberries with 1 tbsp of water in a blender until very smooth.
  2. Then pour through a fine-mesh sieve into a bowl, pressing on and discarding solids
  3. Put raspberries and sugar into a pan and bring to the boil. Simmer for about 5 minutes
  4. Remove and let it cool a little.
  5. To remove from ramekins gently slide a knife around the edge, and invert the ramekins onto a plate. Tap the bottom of ramekin until the panna cotta is released. Drizzle with the raspberries coulis
